Blueberry Cobbler - coffee cake

This cobbler recipe has a very basic base, yet it can be bent however you wish.

I love using fresh blueberries; however, I've used every fruit I can find. Blueberry remains my favorite. 

Ingredients

  • 1/2 stick (4 tbsp) butter, melted
  • 1 1/4 cups sugar (1/4 cup divided)
  • 1 cup self-rising flour
  • 1 cup milk
  • 2 cups fresh or frozen blackberries, blueberries, strawberries, berry pie fillings, or whatever fruit you wish.  
  • 1 tablespoon vanilla extract
  • Optional: cheesecake filling, made from scratch or store-bought
  • Optional: whipped cream or vanilla ice cream

Instructions

  1. Preheat oven to 350°F
  2. Coat the pie dish in butter, NOT oil or flour.
  3. In a bowl, mix 1 cup sugar + flour + milk + vanilla until combined.
  4. Stir in the melted butter.
  5. Pour the batter into the baking dish.
  6. If you choose to add cheese cake filling, dollop softened filling onto the batter and swirl with a butter knife.
  7. Sprinkle the fruit evenly on top (don’t stir the fruit in).
  8. Sprinkle 1/4 cup sugar over the berries. I know it sounds like a lot, however, this is a VERY important set.
  9. Bake for about 1 hour, until golden and bubbly.
  10. Serve warm with ice cream or whipped cream. 

You can really make this recipe your own if you experiment with different fruits and fillings. I have used crushed berries on the bottom, layered batter overtop, then a layer of fresh whole blueberries on top of that - and it's delightful. I could eat the whole thing in one sitting. 

The cheesecake filling is a whole other step up as well. It transforms this cobbler into a simple, yet delicious, coffee cake.
