Mama Mary's Lasagna
This dish is always a crowd-pleaser and makes a large batch. I'm not going to give you a page long story, just want you to get to it and let me know what you think!
Prep Time: Around 15-20 minutes depending on what song is playing.
Cook Time: 1 Hour, unless you forgot to preheat your oven
Serves: 4-12 Depending on how many of you have seconds or thirds!
INGREDIENTS:
1-1.5 lbs ground beef (that extra half pound is helpful, but not mandatory.
1 **32** ounce jar spaghetti sauce (any flavor). Make sure you get the 32 ouncer, not 24. If need be get one 24 and a small can of tomato sauce.
24 ounces of cottage cheese
1 cup of sour cream
1 cup of mayonnaise (NOT MIRACLE WHIP)
1 Velveta sauce packet
3 cups shredded mozzarella cheese or any Mexican blend shredded cheese.
2 large eggs
3/4 cup parmesan cheese
2 teaspoons dried parsley or non-salted Italian seasoning.
Salt to taste
Ground Black Pepper to taste
12 lasagna noodles
1/2 cup water
DIRECTIONS:
1. Preheat oven to 350 degrees.
2. Cook lasagna noodles until they are nearly done, then drain, rinse with cold water, and set aside.
3. Brown ground beef and drain the grease.
4. Add spaghetti sauce and simmer for about 5 minutes. Then remove from heat and set aside.
***Set aside 1C mozzarella and 1/4C parmesan***
5. Grab a big bowl and mix together everything else. **DO not mix in meat sauce**
6. Grease the heck out of your 9x13 inch pan (the deeper the better).
Assemble:
1. Spread some sauce on the bottom of the pan, enough to coat it.
2. Cover with a layer of lasagna noodles.
3. Spread 1 3/4 cup of cheese mixture over noodles, then a 1/4 cup of meat sauce mixture.
4. Cover with another layer of noodles, then repeat 3 and 4 twice.
5. Top with the last layer of noodles, remaining meat sauce, 1C mozzarella, and 1/4C parmesan.
6. Add 1/2C water to the edges of the pan and cover with aluminum foil.
7. Bake at 350 degrees for 45 minutes, uncover and bake an additional 10 minutes until top cheese is fully melted and starting to brown.
LET STAND 5-10 minutes before serving. That dish will burn your tastebuds right off just like anything else that comes out of the oven. So let it rest and cool a bit before you dive in.
