Cheesy Meatloaf with Sweet Glaze
Ingredients
Meatloaf:
- 2 lbs ground beef
- ½ lb ground pork
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
- 1 tsp olive oil
- 2 large eggs
- 2 Tbsp ketchup
- 3 Tbsp Italian seasoning
- 3/5 cup breadcrumbs
- 1/3 cup milk
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup cubed Velveeta (½-inch cubes)
Glaze:
- 3/4 cup ketchup
- 1.5 tsp apple cider vinegar
- 2 Tbsp brown sugar
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions
1. Prep
Preheat oven to 350°F (175°C). Grease a loaf pan or line a baking sheet.
2. Mix
- Combine beef, pork, and all dry seasonings
- In a separate bowl, whisk eggs, milk, ketchup, and olive oil
- Add the wet mixture and breadcrumbs to the meat
- Mix gently until just combined - don't over-mix or it will become too dense.
3. Shape & Add Cheese
Fold in the Velveeta cubes evenly. With this smaller amount, you’ll get little pockets of creaminess without it taking over each bite.
Form into a loaf and place in your pan or on a baking sheet.
** I like to put a layer of meat mix down first, then the Velveeta, then top it off with the remaining meat mixture, making sure to close the sides around the cheese. This gives it an explosion of cheese right in the middle.**
4. Glaze
Mix glaze ingredients until smooth. DO NOT add until close to the end of baking.
5. Bake
- Bake 40 minutes
- Add glaze
- Bake another 20–25 minutes, until internal temp reaches 160°F
6. Rest
This doesn't mean take a nap...Let your loaf sit for about 10 minutes before slicing.

💡 Notes
- Using leaner beef (like 90/10 instead of 80/20) would noticeably lower fat and calories
- Reducing glaze sugar or ketchup would drop carbs/sugar
- The cheese adds a modest bump in fat and sodium, but not as much as you might expect at ½ cup
