Campfire Stew ~ From Scratch

What is campfire stew?
Well, it's just a stew that I started cooking over a campfire at the lake with my family. It grew so popular that it has been requested at most camping expeditions and events. Serve this stew alongside my Viking Pie for your cool-weather dinner party.
Honestly, you don't have to cook this over a fire...you can make it wherever you wish. It is much more convenient to make in the kitchen.
This recipe is SO versatile and incredible, you'll have people swarming your campsite (or dining room) to slurp up every last spoonful.
AND it's fairly easy to make.
I never wanted to give this recipe out. Ever. Never, ever, forever, never, ever. However...I get tired of it being requested so often that I'll just pass it along so folks can make it themselves.Not only is it delicious, but it is also surprisingly healthy. It is a low-carb stew and definitely doesn't taste like it!
Here we go!
Ingredients:
- 8 oz. cream cheese (cubed)
- 16 oz. ground pork sausage (or your meat of choice. I've even used sliced bratwursts as a last-minute substitution)
- Diced tomatoes
- Red pepper small
- Yellow Pepper small
- Green Pepper small
- Small sweet onion
- 1 cup Heavy Cream
- Optional: any other mixed vegetables you wish. I used broccoli, and carrots as well.
- Optional: soup noodles
- Optional: dumplings or gnocchi
This really is a recipe you can do anything with. There are so many options it's incredible. What I've included here is just to get you started.
Cook it:
- Brown your sausage (or preferred meat) in a dutch oven pot
- Add in your vegetables to sear for 2-3 minutes
- Toss in your cubes of cream cheese and stir until cheese is fully melted
- If you're using a broth base: add 2-3 cups water and the corresponding tablespoons of broth base. If you're using canned broth, use 2-3 cans. (it depends on how thick you want your stew)
Or you can try Kettle & Fire's Beef Broth
- Bring to a low boil and add your noodles, dumplings, or gnocchi. Cook until they're done
- Turn heat to medium-low and add in your heavy cream.
- Let simmer for 5-10 minutes and serve!
IF you like your stew a thicker consistency, add in a half-cup to a cup of powder mashed potatoes.

Alternatives/Substitutes:
Missing an ingredient above? Don't think your stew has enough? No worries! You can add just about anything you want!
Here are a few ideas for you:
- Velveta or cheddar cheese
- Sliced and seared polish sausage, deer sausage, or leftover bratwurst
- Ground beef or turkey
- Shredded pork, beef, chicken, or turkey
- Diced potatoes
- Sauteed and seasoned shrimp
- Sliced brussel sprouts
- Corn
- Green beans
- Chicken broth
- Chili peppers
- Leftovers:
- Shred some leftover bbq ribs
- Toss in some leftover mashed potatoes for thickness
- Hot dogs from the night before? Slice them up and throw them in
- Kids wouldn't eat the cabbage? Hide it in the stew!
